Stuffed Italian Meatloaf Recipe

Ingredients:
For the Meatloaf:
- 1 lb ground beef (preferably 80% lean)
- 1 lb ground pork
- 1/2 cup breadcrumbs (preferably Italian-style)

- 2 large eggs
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1/4 cup fresh parsley, chopped

For the Stuffing:
- 1 cup fresh spinach, chopped
- 1 cup mozzarella cheese (shredded)
- 1/2 cup ricotta cheese (optional for extra creaminess)
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
For the Topping:
- 1 cup marinara sauce (store-bought or homemade)
- Fresh basil, chopped (for garnish)
Instructions:
1. Prepare the Filling:
- In a bowl, mix together the spinach, mozzarella cheese, ricotta (if using), Parmesan, garlic powder, oregano, salt, and pepper. Set aside.
2. Prepare the Meatloaf Mixture:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
