Stuffed Pepper Soup Recipe

Ingredients:

  • 1 pound ground beef (or turkey)
  • 1 medium onion, diced
  • 1 cup bell peppers, diced (any color)
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups beef or chicken broth
  • 1 cup cooked rice (white or brown)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Optional: shredded cheese and fresh parsley for garnish

Instructions:

1. Brown the Meat:

  • In a large pot or Dutch oven, brown the ground beef over medium heat. Drain excess fat if necessary.

2. Add Vegetables:

  • Add the diced onion, bell peppers, and minced garlic to the pot. Sauté until the vegetables are softened, about 5-7 minutes.

3. Stir in the Ingredients:

  • Add the diced tomatoes, tomato sauce, broth, cooked rice, oregano, basil, salt, and pepper. Stir well to combine.

4. Simmer:

  • Bring the soup to a boil, then reduce the heat and let it simmer for about 20-30 minutes to allow the flavors to meld. Stir occasionally.

5. Serve:

  • Taste and adjust seasoning as needed. Serve hot, garnished with shredded cheese and fresh parsley if desired.
