Sundae Cupcakes 🍦🧁

A fun twist on classic cupcakes, these Sundae Cupcakes look like mini ice cream sundaes but are actually moist, fluffy cupcakes topped with creamy frosting and all your favorite sundae toppings! Perfect for birthdays, parties, or a sweet treat.


Ingredients

For the Cupcakes:

  • 1 ½ cups (190g) all-purpose flour

  • 1 ½ tsp baking powder

  • ¼ tsp salt

  • ½ cup (115g) unsalted butter, softened

  • 1 cup (200g) granulated sugar

  • 2 large eggs, room temperature

  • 1 tsp vanilla extract

  • ½ cup (120ml) whole milk

For the Frosting & Toppings:

  • 1 cup (230g) unsalted butter, softened

  • 3-4 cups (360-480g) powdered sugar

  • 2-3 tbsp heavy cream or milk

  • 1 tsp vanilla extract

  • Optional Toppings:

    • Maraschino cherries

    • Rainbow sprinkles

    • Chocolate syrup or hot fudge

    • Crushed nuts (peanuts, walnuts)

    • Whipped cream


Instructions

1. Bake the Cupcakes:

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.

  2. In a bowl, whisk flour, baking powder, and salt.

  3. In another bowl, beat butter + sugar until fluffy (~3 mins). Add eggs one at a time, then vanilla.

  4. Alternate adding the dry ingredients and milk, mixing until just combined.

  5. Fill liners ⅔ full and bake 18-20 mins (until a toothpick comes out clean). Cool completely.

2. Make the Frosting:

  1. Beat butter until creamy. Gradually add powdered sugar, vanilla, and cream/milk until light and fluffy.

  2. Pipe frosting in a swirl (like soft-serve ice cream) using a star tip.

3. Decorate Like a Sundae!

  • Top with cherries, sprinkles, chocolate drizzle, or nuts.

  • For extra flair, add a dollop of whipped cream and a wafer cookie on the side.


Serving Suggestions

  • Serve in ice cream cones (trim cupcakes to fit) for a playful look.

  • Drizzle with caramel or strawberry syrup for more sundae vibes.
