Sweet & Tangy Dill Pickle Cookies 🥒🍪

A surprising twist on classic sugar cookies, these pickle cookies are the ultimate conversation starter—sweet, salty, tangy, and oddly addictive! Perfect for pickle lovers or anyone who dares to try something new.


Ingredients:

Cookies:

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 cup granulated sugar

  • ½ cup packed light brown sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 2¼ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • ¼ cup dill pickle juice (straight from the jar!)

  • ½ cup finely chopped dill pickles (small pieces work best)

Optional Glaze (for extra tang):

  • 1 cup powdered sugar

  • 2 tbsp pickle juice (adjust for desired consistency)

  • Pinch of salt


Instructions:

1. Prep & Mix Wet Ingredients:

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  • In a large bowl, cream butter, granulated sugar, and brown sugar until fluffy.

  • Beat in egg and vanilla.

  • Stir in pickle juice—the secret tangy ingredient!

2. Combine Dry Ingredients:

  • In another bowl, whisk flour, baking soda, and salt.

  • Gradually mix dry ingredients into wet until just combined.

  • Fold in chopped pickles (don’t overmix).

3. Bake:

  • Scoop dough into 1-tbsp balls, spacing them 2 inches apart on baking sheets.

  • Flatten slightly with a glass (optional for even baking).

  • Bake for 10–12 minutes until edges are just golden (centers will be soft).

  • Let cool on the sheet for 5 minutes before transferring to a rack.

4. Optional Pickle Glaze:

  • Whisk powdered sugar, pickle juice, and salt until smooth.

  • Drizzle over cooled cookies for extra tangy sweetness.
