Taco Potatoes

Ingredients

  • 1 lb (450g) lean ground beef
  • 4-6 medium Russet potatoes
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/2 cup diced tomatoes
  • Optional toppings: sliced jalapeños, guacamole, salsa, black olives, or cilantro

Instructions

  1. Prepare the potatoes:
    • Preheat the oven to 400°F (200°C).
    • Scrub the potatoes clean and pierce them several times with a fork. Place them directly on the oven rack and bake for 45-60 minutes, or until tender. Alternatively, you can microwave the potatoes for 8-10 minutes, turning halfway through.
  2. Cook the ground beef:
    • While the potatoes are baking, cook the ground beef in a skillet over medium heat until browned. Drain any excess fat.
    • Add the taco seasoning and water to the skillet. Stir to combine and simmer for 5 minutes, or until the sauce thickens.
  3. Assemble the taco potatoes:
    • Once the potatoes are cooked, slice them open lengthwise and fluff the insides with a fork.
    • Spoon the seasoned ground beef evenly over each potato.
    • Top with shredded cheddar cheese, allowing it to melt slightly from the heat of the potatoes.
  4. Add the toppings:
    • Drizzle sour cream over the top of each potato.
    • Sprinkle with chopped green onions and diced tomatoes.
    • Add any additional toppings you like, such as jalapeños, guacamole, or salsa.
  5. Serve:
    • Serve immediately and enjoy!

Tips

  • Make it vegetarian: Substitute the ground beef with black beans or a plant-based meat alternative.
  • Add-ins: Include corn, bell peppers, or onions in the ground beef mixture for extra flavor and texture.
