🌮 Taco Rice – One-Pan, 20-Minute Meal!
A quick, flavorful Tex-Mex dish with seasoned ground beef, fluffy rice, salsa, and melted cheese—perfect for busy nights!
📝 Ingredients
- 1 lb (450g) ground beef (or ground turkey/chicken)
- 1 packet (1.25oz/35g) taco seasoning
- 2 cups (480ml) water
- 2 cups (360g) Minute Rice (instant white rice), uncooked
- 1 cup (240g) salsa (mild, medium, or hot)
- 1 cup (115g) shredded cheddar cheese
- (Optional toppings: sour cream, diced tomatoes, jalapeños, cilantro, avocado)
👩🍳 Instructions (One-Pan!)
1. Brown the Beef
- In a large skillet, cook ground beef over medium-high heat until no longer pink (~5-6 mins). Drain excess fat.
2. Season & Simmer
- Stir in taco seasoning, water, and salsa. Bring to a boil.
- Add Minute Rice, stir, then cover and remove from heat. Let sit 5 mins (rice will absorb liquid).
3. Add Cheese & Serve
- Fluff rice with a fork, then sprinkle cheddar cheese on top.
- Cover for 1-2 mins to melt cheese (or broil 1-2 mins for bubbly cheese).
- Garnish with optional toppings and serve!
✨ Tips
✔ No Minute Rice? Use 1.5 cups regular white rice + 2.5 cups water; simmer 15-20 mins.
✔ Healthier swap: Use cauliflower rice (add after beef is cooked; no simmering needed).
✔ Meal prep: Stores in fridge for 3 days or freezer for 1 month.
Easy, cheesy, and packed with taco flavor! 🎉
Pair with: Tortilla chips, guacamole, or a simple salad. Enjoy! 🌶️🧀
