Here’s a fun and delicious recipe for taco-stuffed pasta shells that will be a hit!

Taco-Stuffed Shells

Ingredients:

  • 12 jumbo pasta shells
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup shredded cheddar cheese (plus more for topping)
  • 1/2 cup sour cream
  • 1 can (15 oz) black beans, drained and rinsed (optional)
  • Chopped green onions or cilantro (for garnish, optional)

Instructions:

  1. Cook the Pasta:
    • Preheat your oven to 350°F (175°C).
    • Boil the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
  2. Prepare the Filling:
    • In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.
    • Stir in the taco seasoning, salsa, and black beans (if using). Cook for another 2-3 minutes until heated through. Remove from heat and stir in the sour cream and 1 cup of shredded cheese.
  3. Stuff the Shells:
    • Take each cooked pasta shell and fill it with the taco mixture. Place the stuffed shells in a greased 9×13 inch baking dish.
  4. Top and Bake:
    • Pour any remaining salsa over the top of the stuffed shells. Sprinkle additional shredded cheese on top.
    • Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  5. Serve:
    • Garnish with chopped green onions or cilantro if desired. Serve hot and enjoy!

Tips:

  • You can customize the filling by adding diced peppers, corn, or other favorite taco toppings.
  • For extra heat, consider adding jalapeños to the filling or topping.
