Tender Beef Recipe

Preparation Time:

Ingredients:

  • 2 lbs beef chuck roast, cut into 2-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Ingredients:
    • Season the beef cubes with salt and pepper.
  2. Sear the Beef:
    • In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat.
    • Add the beef cubes in batches and sear until browned on all sides. Remove and set aside.
  3. Cook the Vegetables:
    • In the same pot, add the chopped onion, garlic, carrots, and celery. Cook for about 5 minutes, until the vegetables start to soften.
  4. Deglaze the Pot:
    • Add the red wine to the pot, if using, and scrape the bottom to release any browned bits. Cook for 2-3 minutes to reduce slightly.
  5. Combine and Simmer:
    • Return the seared beef to the pot.
    • Stir in the beef broth, tomato paste, thyme, rosemary, and bay leaves. Bring to a boil.
  6. Simmer the Beef:
    • Reduce the heat to low, cover the pot, and let it simmer for about 1 hour and 15 minutes, or until the beef is tender.
  7. Thicken the Sauce (Optional):
    • If you prefer a thicker sauce, mix the flour with a bit of water to create a slurry. Stir this into the pot and cook for an additional 5 minutes until the sauce thickens.
  8. Serve:
    • Remove the bay leaves.
    • Garnish with fresh parsley and serve hot.
