Tex Mex Poutine

Ingredients:

For the Fries:

  • 4 large russet potatoes (or use frozen fries)
  • 2 tbsp olive oil
  • Salt and pepper to taste

For the Beef:

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 packet taco seasoning (or homemade seasoning)
  • 1/4 cup water

For the Cheese Sauce:

  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • 1 cup shredded cheddar cheese (or a Tex-Mex blend)
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • Salt and pepper to taste

Toppings:

  • 1/4 cup sour cream
  • 2 tbsp fresh cilantro, chopped
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced jalapeños (optional for heat)
  • 1/4 cup sliced green onions (optional)
  • 1/4 cup guacamole (optional)

Instructions:

1. Prepare the Fries:

  • Preheat your oven to 425°F (220°C).
  • Wash and peel (if desired) the potatoes, and cut them into thin fries.
  • Toss the potato fries in olive oil, salt, and pepper.
  • Spread them out in a single layer on a baking sheet.
  • Bake for 30-35 minutes, flipping halfway through, until they are crispy and golden. If you’re using frozen fries, follow the package instructions.

2. Cook the Beef:

  • While the fries are cooking, heat 1 tablespoon of olive oil in a skillet over medium heat.
  • Add the ground beef and cook, breaking it apart as it browns.
  • Once the beef is cooked through, drain excess fat, and then stir in the taco seasoning and water. Simmer for a few minutes until well combined and thickened. Set aside.

3. Make the Cheese Sauce:

  • In a saucepan, melt 2 tablespoons of butter over medium heat.
  • Add the flour and whisk for 1-2 minutes until it forms a roux (a paste-like consistency).
  • Slowly whisk in the milk until the mixture thickens, about 3-5 minutes.
  • Stir in the shredded cheddar cheese, garlic powder, chili powder, salt, and pepper, and continue stirring until the cheese is fully melted and smooth.

4. Assemble the Tex Mex Poutine:

  • Once the fries are cooked, transfer them to a serving dish.
  • Top the fries with the seasoned ground beef, then drizzle the cheesy sauce generously over the top.
  • Add diced tomatoes, jalapeños, green onions, and cilantro as toppings. Add a dollop of sour cream and guacamole if desired for extra creaminess and flavor.

5. Serve:

  • Serve your Tex Mex Poutine hot, and enjoy the delicious combination of crispy fries, savory beef, cheesy sauce, and fresh toppings.
