Texas Beaver Nuggets 🍯🐾

If you’ve ever visited Buc-ee’s, you’ve likely seen (or devoured) their famous Beaver Nuggets—sweet, crunchy, caramel-coated puffed corn snacks that are downright addictive! Here’s how to make a homemade version of this Texas road trip staple.


Ingredients (Makes 8 cups)

  • 8 cups puffed corn cereal (like Corn Pops or generic puffed corn)

  • 1 cup (2 sticks) butter

  • 1 cup packed brown sugar

  • ½ cup light corn syrup

  • 1 tsp vanilla extract

  • ½ tsp baking soda (for extra crispiness!)

  • 1 tsp salt (optional, for balance)


Instructions

1️⃣ Prep the Puffed Corn

  • Preheat oven to 250°F (120°C).

  • Spread puffed corn on a large baking sheet lined with parchment paper.

2️⃣ Make the Caramel Coating

  • In a saucepan, melt butter over medium heat.

  • Stir in brown sugar and corn syrup, bringing to a gentle boil.

  • Let simmer 2-3 mins, stirring constantly.

  • Remove from heat, then stir in vanilla and baking soda (mixture will foam slightly).

3️⃣ Coat & Bake

  • Pour caramel over puffed corn, tossing gently to coat evenly.

  • Bake for 45 mins, stirring every 15 mins to prevent clumping.

4️⃣ Cool & Break Apart

  • Let cool completely—the caramel will harden into a crispy shell.

  • Break into clusters (or “nuggets”).

🔥 Extra crunch? Bake an extra 10-15 mins for deeper caramelization.
🍯 Flavor twists: Add cinnamon, cayenne, or cocoa powder to the caramel.
