Ingredients:

For the Crust:

  • 1 1/2 cups (180g) graham cracker crumbs
  • 1/3 cup (67g) granulated sugar
  • 6 tablespoons (85g) unsalted butter, melted

For the Coconut Cream Filling:

  • 1 cup (240ml) coconut milk
  • 1 cup (240ml) whole milk
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (30g) cornstarch
  • 4 large egg yolks
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (115g) sweetened shredded coconut

For the Whipped Cream Topping:

  • 1 cup (240ml) heavy whipping cream
  • 2 tablespoons (15g) powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup (20g) toasted coconut flakes for garnish

Instructions:

For the Crust:

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
    • Press the mixture evenly into the bottom and up the sides of a 9-inch pie dish.
    • Bake for 10 minutes, then set aside to cool completely.

For the Coconut Cream Filling:

  1. Prepare the Filling:
    • In a medium saucepan, whisk together the coconut milk, whole milk, granulated sugar, cornstarch, egg yolks, and salt until smooth.
    • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Continue to cook for an additional 1-2 minutes, then remove from heat.
    • Stir in the vanilla extract and shredded coconut.
    • Pour the filling into the cooled crust. Smooth the top with a spatula.
    • Cover with plastic wrap, pressing it directly onto the surface of the filling to prevent a skin from forming.
    • Refrigerate for at least 4 hours, or until completely chilled.

For the Whipped Cream Topping:

  1. Prepare the Whipped Cream:
    • In a large mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
    • Spread the whipped cream over the chilled pie.
  2. Garnish:
    • Sprinkle the toasted coconut flakes over the top of the whipped cream.
