Ingredients:

  • 1 can (16.3 oz) refrigerated biscuit dough
  • 1 cup fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup powdered sugar (for dusting)

Instructions:

  1. Preparation:
    • Preheat your oven to 375°F (190°C).
    • Line a baking sheet with parchment paper or a silicone baking mat.
  2. Making the Filling:
    • In a medium bowl, combine the blueberries, granulated sugar, cornstarch, lemon juice, vanilla extract, and ground cinnamon. Stir gently to coat the blueberries evenly.
  3. Assembling the Bombs:
    • Open the can of biscuit dough and separate the biscuits.
    • Flatten each biscuit into a 4-inch circle using your hands or a rolling pin.
    • Place about 1 tablespoon of the blueberry mixture in the center of each flattened biscuit.
    • Fold the edges of the dough over the filling and pinch them together to seal, forming a ball. Make sure the seams are sealed well to prevent the filling from leaking out.
  4. Baking:
    • Place the sealed dough balls seam-side down on the prepared baking sheet.
    • Brush the tops with melted butter.
    • Bake in the preheated oven for 12-15 minutes, or until the bombs are golden brown.
  5. Finishing:
    • Remove the baking sheet from the oven and let the blueberry pie bombs cool for a few minutes.
    • Dust the tops with powdered sugar before serving.
