The Greatest Pineapple Bake

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 can (20 oz) crushed pineapple, drained
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup shredded coconut (optional)
  • 1/2 cup brown sugar
  • 1/2 cup chopped pecans

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish or a similar-sized casserole dish with cooking spray or butter.
  2. Prepare the Batter: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the drained crushed pineapple and vanilla extract.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  4. Assemble the Bake: Spread the batter evenly into the prepared baking dish. If using shredded coconut, sprinkle it evenly over the top of the batter.
  5. Prepare Topping: In a small bowl, mix together the brown sugar and chopped pecans. Sprinkle this mixture evenly over the top of the batter.
  6. Bake: Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  7. Cool and Serve: Allow the pineapple bake to cool for at least 10 minutes before serving. Cut into squares and serve warm or at room temperature.
