Classic Tiramisu

Ingredients:

  • For the Coffee Mixture:
    • 1 cup strong brewed coffee, cooled
    • 2 tablespoons coffee liqueur (optional)
  • For the Mascarpone Mixture:
    • 3 large egg yolks
    • 1/2 cup granulated sugar
    • 1 cup mascarpone cheese
    • 1 cup heavy cream
  • For Assembling:
    • 24-30 ladyfinger cookies (savoiardi)
    • Unsweetened cocoa powder, for dusting
    • Dark chocolate shavings or cocoa powder, for garnish (optional)

Instructions:

  1. Prepare the Coffee Mixture:
    • In a shallow dish, combine the brewed coffee and coffee liqueur. Set aside to cool.
  2. Make the Mascarpone Mixture:
    • In a mixing bowl, whisk the egg yolks and sugar together until pale and creamy (about 5 minutes). You can use an electric mixer for ease.
    • Gently fold in the mascarpone cheese until smooth and well combined.
  3. Whip the Cream:
    • In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the mascarpone mixture until fully incorporated.
  4. Assemble the Tiramisu:
    • Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them (just a quick dip). Lay half of the dipped ladyfingers in a single layer in a 9×9-inch dish (or similar size).
    • Spread half of the mascarpone mixture over the ladyfingers.
    • Repeat the process with the remaining ladyfingers and mascarpone mixture.
  5. Chill:
    • Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.
  6. Serve:
    • Before serving, dust the top with cocoa powder and add chocolate shavings if desired. Slice and serve chilled.

Tips:

  • Egg Safety: If you’re concerned about using raw eggs, you can use pasteurized eggs or an egg-free mascarpone mixture.
  • Make Ahead: Tiramisu can be made a day in advance, making it a great dessert for entertaining.

Enjoy your delicious homemade Tiramisu!
