Tiramisu Cupcakes

Ingredients:

For the Cupcakes:

  • 1 and 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or whole milk (for moisture)

For the Coffee Soak:

  • 1/2 cup brewed coffee (cooled)
  • 2 tablespoons coffee liqueur (optional, such as Kahlua)
  • 1 tablespoon sugar (optional)

For the Mascarpone Frosting:

  • 8 oz mascarpone cheese, softened
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cocoa powder (for dusting)

Instructions:

1. Prepare the cupcakes:

  • Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, beat together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  • Add the eggs one at a time, beating well after each addition, followed by the vanilla extract.
  • Add the dry ingredients to the wet ingredients in batches, alternating with the sour cream (or milk), mixing until just combined.
  • Spoon the batter into the cupcake liners, filling each about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely on a wire rack.

2. Make the coffee soak:

  • In a small bowl, combine the brewed coffee, coffee liqueur (if using), and sugar. Stir until the sugar dissolves.

3. Soak the cupcakes:

  • Once the cupcakes have cooled, use a fork or toothpick to poke a few holes in each cupcake.
  • Carefully drizzle or brush the coffee soak over the cupcakes, allowing it to soak in. Don’t soak them too much—just enough to infuse the flavor without making the cupcakes soggy.

4. Make the mascarpone frosting:

  • In a mixing bowl, beat together the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and fluffy. Start on low speed and gradually increase to medium-high until soft peaks form.

5. Frost the cupcakes:

  • Pipe or spread the mascarpone frosting onto each cooled and soaked cupcake. Be generous with the frosting for a rich, creamy texture.
  • Lightly dust the tops with cocoa powder for that signature tiramisu look.

6. Serve:

  • Serve the Tiramisu Cupcakes immediately or refrigerate them for 30 minutes to let the flavors meld. They’re perfect for any occasion, whether it’s a party or just a sweet treat to enjoy with coffee!
