Tiramisu Truffles

Ingredients:

  • 1 cup ladyfinger cookies, crushed
  • 8 oz mascarpone cheese
  • 1/4 cup powdered sugar
  • 2 tbsp brewed espresso (cooled)
  • 1 tsp vanilla extract
  • 1/4 cup dark chocolate, melted
  • Cocoa powder (for coating)

Instructions:

1. Prepare the Base:

  • In a large bowl, combine the crushed ladyfinger cookies, mascarpone cheese, powdered sugar, cooled brewed espresso, and vanilla extract.
  • Mix everything together until you have a smooth, sticky dough-like consistency. If the mixture feels too wet, you can add a little more crushed ladyfinger cookies to balance it out.

2. Shape the Truffles:

  • Take small portions of the mixture (about 1 tablespoon each) and roll them into balls between your palms. Continue until all the mixture is used up.

3. Coat the Truffles:

  • Roll the truffles in the melted dark chocolate, ensuring they are fully coated. Allow the excess chocolate to drip off before placing the truffle on a parchment-lined tray.
  • Once all truffles are coated in chocolate, place them in the refrigerator to chill for about 20-30 minutes, or until firm.

4. Final Touch – Cocoa Powder Coating:

  • After the truffles have chilled and firmed up, roll them in cocoa powder for a final touch. The cocoa powder will give them the classic Tiramisu look and add a rich cocoa flavor.

5. Serve:

  • Once the truffles are fully chilled and coated, serve them up on a platter. These truffles can be stored in an airtight container in the fridge for up to 1 week.
