Trisha Yearwood’s Butterscotch Bars

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 1/2 cups packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butterscotch chips
  • 1 cup chopped walnuts (optional)

Instructions:

1. Preheat the Oven:
  • Preheat your oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish or line it with parchment paper for easy removal of the bars.
2. Prepare the Batter:
  • In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
3. Mix the Dry Ingredients:
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
4. Add the Butterscotch Chips:
  • Fold in the butterscotch chips (and chopped walnuts, if using).
5. Bake the Bars:
  • Spread the batter evenly into the prepared baking dish.
  • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The top should be golden brown.
6. Cool and Serve:
  • Allow the bars to cool in the pan before cutting them into squares.
  • Serve and enjoy these sweet, chewy butterscotch bars!

Tips:

  • Variations: You can add mini chocolate chips, white chocolate chips, or other nuts for extra texture and flavor.
  • Storage: Store leftover bars in an airtight container at room temperature for up to a week or refrigerate them for longer freshness.
  • For extra flavor: Top the bars with a drizzle of melted butterscotch or chocolate for an added touch of sweetness.

Trisha Yearwood’s Butterscotch Bars are the perfect balance of sweetness and richness, sure to please anyone who loves a delicious homemade treat! 🍯🍪
