Turkish Gözleme 🇹🇷✨

A crispy, flaky flatbread stuffed with savory fillings like spinach-feta or spiced minced meat—cooked on a griddle and served warm. Street food magic at home!


🍽️ Ingredients (Makes 4)

For the Dough:

  • 2 cups (250g) all-purpose flour (+ extra for dusting)

  • ½ tsp salt

  • ½ cup (120ml) warm water

  • 2 tbsp olive oil (or yogurt for softer dough)

Classic Fillings (Pick One):

  1. Spinach & Feta:

    • 2 cups chopped spinach

    • ½ cup crumbled feta

    • 1 small onion, finely diced

    • 1 tbsp olive oil

    • ½ tsp black pepper

  2. Spiced Minced Meat:

    • ½ lb (200g) ground lamb or beef

    • 1 small onion, grated

    • 1 tsp paprika

    • ½ tsp cumin

    • ¼ cup chopped parsley

To Cook:

  • Butter or oil for griddling


👩🍳 Instructions

1. Make the Dough

  1. Mix flour and salt in a bowl.

  2. Add water and oil, knead for 5-7 mins until smooth. Cover, rest 30 mins.

2. Prepare Filling

  • Spinach-feta: Sauté onion in oil, wilt spinach, mix with feta.

  • Meat: Brown meat with onion and spices, drain fat, stir in parsley.

3. Shape & Fill

  1. Divide dough into 4 balls. Roll each into a thin oval (~12-inch).

  2. Spread filling on one half, leaving a border. Fold over, seal edges by pressing.

4. Cook

  • Heat a skillet, brush with butter/oil.

  • Cook gözleme 2-3 mins per side until golden and crispy.

5. Serve

  • Cut into wedges, serve with lemon wedges, yogurt, or ayran (Turkish yogurt drink).
