Instructions

  1. Prepare the strawberry layer:
    • In a blender or food processor, combine the strawberries, sugar, and lemon juice. Blend until smooth.
    • Strain the mixture through a fine-mesh sieve to remove seeds (optional for a smoother texture).
    • Pour the strawberry mixture into a shallow dish or ice cream molds and freeze for 1-2 hours, or until partially set.
  2. Prepare the yogurt layer:
    • In a medium bowl, mix the Greek yogurt, sugar, and vanilla extract until smooth.
    • Pour the yogurt mixture over the partially frozen strawberry layer in the dish or molds.
  3. Freeze:
    • Cover the dish or molds with plastic wrap and freeze for at least 4-6 hours, or until firm.
  4. Serve:
    • Let the ice cream sit at room temperature for 5-10 minutes to soften slightly before scooping.
    • Garnish with fresh mint leaves and sliced strawberries if desired.

Tips

  • No-churn option: If you don’t have an ice cream maker, simply freeze the mixture in a shallow dish, stirring every 30 minutes for the first 2 hours to prevent ice crystals.
