Tzatziki Chicken Salad

Ingredients:

  • 2 cups cooked chicken, shredded or diced (grilled or rotisserie works well)
  • 1 cup Greek yogurt (plain)
  • 1/2 cucumber, grated and excess moisture squeezed out
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill (or 1 teaspoon dried dill)
  • Salt and pepper, to taste
  • Optional: chopped fresh parsley for garnish
  • Optional: lettuce leaves, pita bread, or whole-grain bread for serving

Instructions:

  1. Make the Tzatziki Sauce:
    • In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, salt, and pepper. Mix until well combined. Adjust seasoning to taste.
  2. Combine with Chicken:
    • In a large mixing bowl, add the cooked chicken and pour the tzatziki sauce over it. Gently fold until the chicken is evenly coated.
  3. Serve:
    • You can serve the Tzatziki Chicken Salad on a bed of lettuce, in pita bread, or on whole-grain bread as a sandwich. Garnish with chopped parsley if desired.
  4. Chill (Optional):
    • For best flavor, let the salad chill in the refrigerator for about 30 minutes before serving.

Tips:

  • Add-ins: Feel free to add diced tomatoes, red onion, or bell peppers for extra crunch and flavor.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
