Tzatziki Chicken Salad

Ingredients:

  • 3 cups cooked and shredded chicken
  • 1/2 cup thinly sliced red onion
  • 1 English cucumber, shredded
  • 1 cup plain Greek yogurt
  • 3 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice (optional for extra tang)
  • 1 garlic clove, minced (optional, for extra flavor)
  • Salt and pepper to taste

Instructions:

  1. Prepare the ingredients:

    • Shred the chicken if it’s not already cooked and shredded.
    • Shred the cucumber using a box grater or food processor. Place the shredded cucumber in a clean towel or paper towel to squeeze out any excess moisture.
    • Thinly slice the red onion and chop the fresh dill.
  2. Make the tzatziki dressing:

    • In a large bowl, combine the Greek yogurt, chopped dill, lemon juice (if using), and minced garlic (if using). Mix well until smooth.
    • Season with salt and pepper to taste.
  3. Combine the salad:

    • Add the shredded chicken, sliced red onion, and shredded cucumber to the yogurt mixture.
    • Stir gently to combine, ensuring the chicken and vegetables are evenly coated with the tzatziki dressing.
  4. Taste and adjust:

    • Taste the salad and adjust the seasoning by adding more salt, pepper, or lemon juice if needed.
  5. Serve:
