Ultimate Chicken Casserole

Ingredients:

  • For the Casserole:
    • 4 cups cooked chicken (shredded or cubed)
    • 1 (10.5 oz) can cream of chicken soup
    • 1 (10.5 oz) can cream of mushroom soup
    • 1/2 cup sour cream
    • 1 cup shredded cheddar cheese
    • 1 cup frozen peas (or any veggies you prefer)
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon pepper
    • 1 1/2 cups crushed crackers (Ritz crackers work great, or use breadcrumbs if preferred)
  • For the Topping:
    • 1 cup shredded mozzarella cheese
    • 1 tablespoon melted butter

Instructions:

1. Prepare the Oven:
  • Preheat your oven to 350°F (175°C).
2. Combine Casserole Ingredients:
  • In a large bowl, mix the cooked chicken, cream of chicken soup, cream of mushroom soup, sour cream, shredded cheddar cheese, frozen peas, garlic powder, onion powder, salt, and pepper. Stir everything until it’s well combined.
3. Transfer to Baking Dish:
  • Spread the mixture evenly in a greased 9×13-inch baking dish.
4. Add the Topping:
  • Sprinkle the crushed crackers evenly over the top of the casserole. Drizzle the melted butter over the crackers to help them brown and get crispy.
5. Bake:
  • Place the casserole in the oven and bake for about 30-35 minutes, or until the casserole is bubbly and the topping is golden brown.
6. Add the Mozzarella Cheese:
  • After 30-35 minutes of baking, sprinkle the shredded mozzarella cheese over the top of the casserole.
  • Bake for an additional 5-10 minutes until the cheese is melted and bubbly.
7. Serve:
  • Let the casserole sit for a few minutes before serving. This will allow it to set and be easier to cut.
