  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

For the Toffee Sauce:

  • 1/2 cup (115g) unsalted butter
  • 1 cup (200g) brown sugar, packed
  • 1/2 cup (120ml) heavy cream
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt (optional, for a salted toffee version)

Instructions:

1. Prepare the Dates:

  • Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan (or an 8×8-inch square pan) with parchment paper.
  • Place the chopped dates in a bowl and pour the boiling water over them. Add baking soda and stir. Let the dates soak for 10 minutes. This will soften the dates and create a luscious, moist base for the cake.

2. Make the Pudding Cake:

  • Using an electric mixer or a hand whisk, cream together the butter and brown sugar in a large bowl until light and fluffy.
  • Beat in the eggs, one at a time, making sure each is fully incorporated before adding the next.
