Vanilla Custard Cream Squares

Prep Time: 20 mins | Cook Time: 20 mins (+ chilling) | Servings: 9 squares

Ingredients:

For the Crust:

  • 1 ½ cups graham cracker crumbs

  • ⅓ cup melted butter

  • ¼ cup granulated sugar

For the Custard Filling:

  • 2 cups whole milk

  • 1 cup heavy cream

  • ¾ cup granulated sugar

  • 5 large egg yolks

  • ¼ cup cornstarch

  • 1 tbsp vanilla extract

  • 2 tbsp butter (optional, for extra richness)

For Topping (Optional):

  • Whipped cream

  • Fresh berries or a dusting of powdered sugar


Instructions:

1. Make the Graham Cracker Crust:

  • Preheat oven to 350°F (175°C).

  • In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.

  • Press firmly into an 8×8-inch (or 9×9-inch) baking dish lined with parchment paper.

  • Bake for 8-10 minutes, then let cool.

2. Prepare the Custard Filling:

  • In a saucepan, heat milk and heavy cream over medium heat until steaming (do not boil).

  • In a separate bowl, whisk egg yolks, sugar, and cornstarch until smooth.

  • Slowly pour the hot milk mixture into the egg mixture while whisking constantly.

  • Return the mixture to the saucepan and cook over medium-low heat, stirring constantly, until thickened (about 5-7 minutes).

  • Remove from heat and stir in vanilla extract and butter (if using).

3. Assemble & Chill:

  • Pour the custard over the cooled crust and smooth the top.

  • Cover with plastic wrap (pressed directly on the custard to prevent a skin) and refrigerate for at least 4 hours (or overnight).

4. Serve:

  • Cut into squares and top with whipped cream or fresh berries if desired.


Tips:

✔️ For a firmer custard, increase cornstarch to 1/3 cup.
✔️ Use vanilla bean paste for extra flavor.
✔️ Let it chill thoroughly for clean slices.
