Ingredients:

  • 4-5 medium potatoes, peeled and diced (Yukon gold or russet work well)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 3 cups vegetable broth
  • 1 cup unsweetened coconut milk (or other plant-based milk like almond or cashew milk)
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika (optional, for flavor)
  • Salt and pepper, to taste
  • 1 tablespoon lemon juice (optional, for brightness)
  • Chopped fresh parsley (optional, for garnish)

Instructions:

1. Sauté the Vegetables:

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté for 4-5 minutes, until softened and translucent.
  • Add the minced garlic, diced carrots, and a pinch of salt. Sauté for another 2-3 minutes, until the garlic is fragrant.

2. Add the Potatoes and Broth:

  • Add the diced potatoes to the pot, followed by the vegetable broth, dried thyme, garlic powder, onion powder, and smoked paprika (if using).
  • Stir to combine, bringing everything to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for about 20 minutes, or until the potatoes are tender.

3. Blend the Soup:

  • Once the potatoes are cooked, use an immersion blender directly in the pot to blend the soup until smooth and creamy. Alternatively, you can transfer the soup in batches to a countertop blender. Blend until you reach your desired consistency (you can leave some chunks for texture, if preferred).
  • If you want the soup to be extra creamy, add the coconut milk (or other plant-based milk) and blend again until smooth.

4. Taste and Adjust:

  • Taste the soup and adjust the seasoning, adding more salt, pepper, or paprika if needed. For added brightness, stir in 1 tablespoon of lemon juice.

5. Serve:

  • Ladle the soup into bowls and garnish with fresh parsley, if desired.
  • Serve hot, with some crusty bread on the side or a green salad for a complete meal.

Tips:

  • For extra creaminess: You can add a few soaked cashews (about 1/4 cup) to the soup while blending for an even creamier texture.
  • Vegetable variations: You can add other veggies like celery, leeks, or parsnips to the soup for extra flavor and nutrition.
  • Flavor variations: Add fresh herbs like rosemary or fresh thyme while simmering for a fragrant, herby flavor.
