Veggie Casserole

Ingredients:

  • 2 cups mixed vegetables (fresh or frozen; e.g., broccoli, carrots, bell peppers, zucchini)
  • 1 cup cooked quinoa, rice, or pasta (optional)
  • 1 can (15 oz) diced tomatoes, drained
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup breadcrumbs (optional)
  • 1/2 cup vegetable broth or milk
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning (or your favorite herbs)
  • Salt and pepper to taste
  • Olive oil

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Sauté Vegetables: In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and garlic, sautéing until fragrant and the onion is translucent. Add the mixed vegetables and cook until they are just tender.
  3. Combine Ingredients: In a large bowl, mix the sautéed vegetables with the cooked quinoa, diced tomatoes, half of the cheese, and the vegetable broth. Season with Italian seasoning, salt, and pepper.
  4. Transfer to Baking Dish: Pour the mixture into a greased baking dish (about 9×9 inches or similar). Spread it evenly.
  5. Top with Cheese and Breadcrumbs: Sprinkle the remaining cheese on top, and if desired, add a layer of breadcrumbs for extra crunch.
  6. Bake: Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the breadcrumbs are golden.
  7. Cool and Serve: Let the casserole cool for a few minutes before serving. Enjoy it as a main dish or as a side!

Customization Ideas:

  • Protein: Add cooked beans, lentils, or tofu for extra protein.
  • Herbs: Fresh herbs like basil or parsley can enhance the flavor.
  • Spice: For a kick, add red pepper flakes or your favorite hot sauce.
