Vintage Funnel Cake Bites

Ingredients:

  • Vegetable oil or shortening for frying
  • 2½ cups all-purpose flour (or self-rising flour, omit the baking powder if using self-rising flour)
  • ¼ teaspoon salt
  • 2 teaspoons baking powder (omit if using self-rising flour)
  • 2 tablespoons granulated sugar
  • ¼ teaspoon ground nutmeg
  • 2 large eggs
  • 1 cup milk (more if needed for batter consistency)

For Serving:

  • Powdered sugar (for dusting)
  • Optional: Chocolate sauce, fruit toppings, or whipped cream

Instructions:

1. Heat the oil:

  • In a large pot or deep fryer, heat the vegetable oil or shortening to 350°F (175°C). You need enough oil to submerge the funnel cake bites, so ensure there’s about 3 inches of oil in the pot.

2. Prepare the batter:

  • In a medium mixing bowl, whisk together the flour, salt, baking powder, sugar, and ground nutmeg.
  • In a separate bowl, whisk together the eggs and milk until smooth.
  • Gradually add the wet ingredients into the dry ingredients, mixing until just combined. The batter should be thick but pourable. If it’s too thick, add a little more milk to reach the desired consistency.

3. Form the funnel cake bites:

  • Using a spoon or small ladle, drop spoonfuls of batter into the hot oil. For smaller bites, you can use your hands or a piping bag to drop the batter in bite-sized pieces into the oil.
  • Fry the bites for about 2-3 minutes, or until golden brown on all sides. Work in batches to avoid overcrowding the oil.

4. Drain and serve:

  • Remove the fried funnel cake bites with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  • Immediately dust the funnel cake bites with powdered sugar while they’re still warm.

5. Serve:

  • Serve the funnel cake bites as they are, or with a drizzle of chocolate sauce, fresh fruit, or whipped cream on top for extra indulgence.
