Weight Watchers Blueberry Donuts Recipe

Ingredients:

  • 1 ½ cups whole wheat pastry flour (or all-purpose flour for a lighter version)
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup unsweetened applesauce
  • 1 egg (or 2 egg whites for fewer calories)
  • ¼ cup non-fat milk (or almond milk for a dairy-free version)
  • ¼ cup granulated sugar substitute (like Stevia, Monk Fruit, or any WW-friendly sweetener)
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries (no sugar added)
  • Cooking spray (for greasing the donut pan)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a donut pan with cooking spray or lightly brush it with oil.
  2. In a medium bowl, combine the flour, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the applesauce, egg (or egg whites), milk, sweetener, and vanilla extract.
  4. Gradually add the wet ingredients into the dry ingredients, stirring until combined. Be careful not to overmix; it should form a thick batter.
  5. Fold in the blueberries gently, being cautious not to crush them.
  6. Spoon the batter into the donut pan, filling each mold about ¾ full.
  7. Bake for about 15-18 minutes, or until a toothpick inserted into a donut comes out clean.
  8. Let the donuts cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  9. Optional: Dust with powdered sugar substitute or drizzle with a simple glaze made from a bit of powdered sweetener and a splash of milk.
