Western Omelet Quiche

This hearty Western Omelet Quiche combines the flavors of a classic diner-style Western omelet with the creamy, custardy texture of a quiche. Packed with ham, bell peppers, onions, and cheese, it’s perfect for breakfast, brunch, or even dinner!

Ingredients

For the Crust:

  • 1 9-inch pie crust (homemade or store-bought)

  • 1 tbsp butter (for greasing, if blind baking)

For the Filling:

  • 6 large eggs

  • 1 cup heavy cream (or half-and-half)

  • ½ cup diced ham (or cooked bacon)

  • ½ cup diced bell peppers (red, green, or mixed)

  • ½ cup diced onion

  • 1 cup shredded cheddar cheese (or pepper jack for spice)

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp garlic powder

  • 1 tbsp butter or olive oil (for sautéing)

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Prepare the crust:

    • If using homemade dough, roll it out and fit it into a 9-inch pie dish. Crimp edges.

    • For a crispier crust, blind bake: Line with parchment, fill with pie weights or dried beans, and bake for 10 minutes. Remove weights and bake 5 more minutes.

  3. Sauté the veggies & ham:

    • In a skillet, melt butter over medium heat.

    • Add onions and bell peppers, cooking until soft (about 5 minutes).

    • Stir in ham and cook for another 2 minutes. Remove from heat.

  4. Make the egg mixture:

    • In a bowl, whisk eggs, cream, salt, pepper, and garlic powder.

  5. Assemble the quiche:

    • Spread the veggie-ham mixture evenly over the crust.

    • Sprinkle shredded cheese on top.

    • Pour the egg mixture over everything.

  6. Bake:

    • Place in the oven and bake for 35-45 minutes, until the center is set and the top is golden.

    • If the edges brown too quickly, cover with foil.

  7. Cool & serve:

    • Let rest for 10 minutes before slicing.

    • Garnish with fresh herbs (chives or parsley) if desired.
