White Chocolate Raspberry Cheesecake Recipe

Ingredients

  • For the Crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup sugar
    • 1/2 cup unsalted butter, melted
  • For the Cheesecake Filling:
    • 24 oz cream cheese, softened
    • 3/4 cup sugar
    • 1 tsp vanilla extract
    • 3 large eggs
    • 8 oz white chocolate, melted and slightly cooled
    • 1 cup fresh or frozen raspberries
  • For the Raspberry Sauce (optional):
    • 1 cup raspberries (fresh or frozen)
    • 1/4 cup sugar
    • 1 tbsp lemon juice

Instructions

  1. Prepare the Crust:
    • Preheat your oven to 325°F (163°C).
    • In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.
    • Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool.
  2. Make the Cheesecake Filling:
    • In a large mixing bowl, beat the cream cheese until smooth. Add the sugar and vanilla extract, mixing until well combined.
    • Add the eggs one at a time, mixing on low speed until just combined. Do not overmix.
    • Gradually add the melted white chocolate, mixing until smooth.
    • Gently fold in the raspberries.
  3. Bake the Cheesecake:
    • Pour the cheesecake filling over the cooled crust.
    • Bake in the preheated oven for about 50-60 minutes, or until the center is set but still slightly jiggly.
    • Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  4. Cool and Chill:
    • Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours, preferably overnight.
  5. Make the Raspberry Sauce (optional):
    • In a small saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat until the mixture bubbles and thickens, about 5-7 minutes. Strain to remove seeds, if desired. Let cool.
  6. Serve:
    • Once chilled, remove the cheesecake from the springform pan. Slice and drizzle with raspberry sauce, if using. Garnish with additional raspberries or white chocolate shavings.
