Here’s a simple recipe for a White Chocolate Strawberry Cheesecake:
Ingredients:
Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup melted butter
Cheesecake:
- 2 cups cream cheese, softened
- 1 cup white chocolate chips
- 1/2 cup sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1 cup sour cream
Topping:
- 1 cup fresh strawberries, sliced
- 1 tbsp sugar
- 1 tbsp lemon juice
Instructions:
- Preheat the oven to 325°F (163°C).
- Prepare the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan. Bake for 10 minutes, then cool.
- Melt the white chocolate: In a microwave or double boiler, melt the white chocolate chips. Let cool slightly.
- Make the filling: Beat the cream cheese and sugar until smooth. Add melted white chocolate, vanilla, and eggs, mixing until just combined. Add sour cream and mix well.
- Bake the cheesecake: Pour the filling over the cooled crust. Bake for 50-60 minutes or until the center is set. Turn off the oven and let it cool inside for 1 hour, then refrigerate for at least 4 hours.
- Prepare topping: Mix strawberries, sugar, and lemon juice. Let sit for 15 minutes to release juices.
- Serve: Top the cheesecake with the strawberry mixture before serving.
Enjoy!
