White Lasagna Soup 🍜✨

Creamy, cheesy, and packed with cozy Italian flavors—this soup is like a deconstructed white lasagna in a bowl! Ready in 30 minutes and perfect for chilly nights.


Ingredients

  • 1 tbsp olive oil

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 1 lb ground turkey or chicken (or Italian sausage for extra flavor!)

  • 1 tsp Italian seasoning

  • ½ tsp salt

  • ¼ tsp black pepper

  • 4 cups chicken broth

  • 1 (15 oz) can ricotta cheese (or 1.5 cups fresh)

  • 1 cup grated Parmesan cheese

  • 2 cups chopped spinach or kale (optional)

  • 1 cup heavy cream or half-and-half (for extra richness)

  • 8 oz mafalda or broken lasagna noodles

(Optional garnishes: fresh basil, red pepper flakes, extra Parmesan)


Instructions

1️⃣ Sauté Aromatics: Heat oil in a pot over medium heat. Cook onion until soft (3 mins), then add garlic and cook 30 seconds.
2️⃣ Brown Meat: Add ground turkey, Italian seasoning, salt, and pepper. Cook until no pink remains (5 mins).
3️⃣ Simmer Soup: Pour in broth and bring to a boil. Add noodles and cook until al dente (about 10 mins).
4️⃣ Cheesy Finish: Reduce heat to low. Stir in ricotta, Parmesan, and cream until smooth. Add spinach (if using) and heat until wilted.
5️⃣ Serve: Ladle into bowls and top with fresh basil and more Parmesan.
