Yogurt Cake Recipe

Ingredients:

  • 1 cup (240g) plain yogurt
  • 1 cup (200g) sugar
  • ½ cup (120ml) vegetable oil (or melted butter)
  • 3 large eggs
  • 2 cups (250g) all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9-inch (23cm) round or loaf pan and line it with parchment paper for easy removal.
  2. Mix wet ingredients:
    • In a large bowl, whisk together the yogurt, sugar, and vegetable oil until smooth.
    • Add the eggs one at a time, whisking well after each addition.
    • Stir in the vanilla extract.
  3. Add dry ingredients:
    • In a separate bowl, sift together the flour, baking powder, and salt.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  4. Bake the cake:
    • Pour the batter into the prepared pan and smooth the top with a spatula.
    • Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool and serve:
    • Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
