Zero-Carb Yogurt Bread 🍞✨

Only 3 ingredients, no flour, no sugar—just soft, fluffy, keto-friendly bread! Perfect for toast, sandwiches, or slathering with butter.

Ingredients (Makes 1 small loaf)

  • 1 cup (240g) plain Greek yogurt (full-fat for best texture)

  • 2 large eggs (room temperature)

  • ½ tsp baking powder (for lift)

  • Optional add-ins:

    • 1 tsp garlic powder & rosemary (savory version)

    • ½ tsp cinnamon + 1 tbsp erythritol (sweet version)

    • 2 tbsp grated Parmesan (cheesy bread)

Instructions

1. Prep:

  • Preheat oven to 350°F (175°C).

  • Line a small loaf pan (8×4-inch) with parchment paper (or grease well).

2. Mix:

  • In a bowl, whisk yogurt and eggs until smooth.

  • Stir in baking powder (and any add-ins).

3. Bake:

  • Pour batter into the pan.

  • Bake for 30–35 minutes until golden and a toothpick comes out clean.

  • Let cool 10 minutes before slicing—it firms up as it cools!

Tips for Success:

✔ Use thick Greek yogurt (drain excess liquid if needed).
✔ Room-temp eggs blend more smoothly.
✔ Slice thin—it’s denser than regular bread but perfect toasted!

Why It Works:

  • Zero carbs (if using unsweetened yogurt).

  • High protein from yogurt and eggs.

  • Versatile—go savory or sweet!

Great with:

  • Avocado & Everything Bagel seasoning 🥑

  • Sugar-free jam 🍓

  • Melted cheese 🧀

Variations:

  • “Cloud Bread” Style: Separate eggs, whip whites to stiff peaks, then fold into yogurt mixture for extra fluff.

  • Cheesy Garlic Bread: Add ¼ cup shredded mozzarella + 1 tsp garlic powder.

Craving a crunch? Sprinkle sesame seeds on top before baking! Would you try this as a sandwich bun? 😊
