  • 2 cups all-purpose flour

  • 1 teaspoon lemon zest (from about 1 lemon)
  • 1 tablespoon fresh lemon juice

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Dough:
    • In a large mixing bowl, cream together the softened butter and powdered sugar until smooth and fluffy (about 2-3 minutes).
    • Add the lemon zest, lemon juice, and vanilla extract to the butter mixture, and mix until combined.
    • In a separate bowl, whisk together the flour, cornstarch, and salt.
    • Gradually add the dry ingredients to the wet mixture, mixing just until combined. The dough will be soft but not sticky.
  3. Form the Cookies:
    • Roll the dough into small balls, about 1 inch in size (you can use a cookie scoop to make this easier).
    • Gently roll each dough ball in powdered sugar to coat it lightly.
