Zucchini Boats with Spinach and Mushroom Filling

Ingredients

  • 2 medium zucchinis
  • 1 cup fresh spinach, chopped
  • 1 cup mushrooms, diced
  • 1 cup (240g) ricotta cheese
  • 1/2 cup (50g) shredded mozzarella cheese (plus extra for topping)
  • 1/4 cup (25g) grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prepare the zucchini:
    • Cut the zucchinis in half lengthwise. Use a spoon to scoop out the center flesh, leaving a 1/4-inch thick shell. Reserve the scooped-out zucchini flesh for later.
  3. Make the filling:
    • Heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
    • Add the diced mushrooms and cook for 3-4 minutes until softened.
    • Stir in the chopped spinach and reserved zucchini flesh. Cook for another 2-3 minutes until the spinach is wilted. Season with salt and pepper.
    • Remove from heat and stir in the ricotta cheese, mozzarella cheese, and Parmesan cheese until well combined.
  4. Fill the zucchini boats:
    • Spoon the filling mixture evenly into the hollowed-out zucchini halves. Sprinkle extra mozzarella cheese on top.
  5. Bake:
    • Place the zucchini boats on the prepared baking sheet. Bake for 20-25 minutes, or until the zucchini is tender and the cheese is melted and golden.
  6. Serve:
    • Let the zucchini boats cool slightly before serving. Enjoy as a main dish or side!

Tips

  • Add protein: Include cooked ground turkey, chicken, or crumbled tofu for a heartier meal.
  • Make ahead: Prepare the filling and hollow out the zucchini ahead of time. Assemble and bake when ready to serve.
