Ingredients:

Cake:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large egg whites
  • 1 teaspoon vanilla extract
  • 3/4 cup whole milk

Frosting:

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons whole milk

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. Prepare Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar:
    • In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
  4. Add Egg Whites and Vanilla:
    • Add the egg whites one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Combine Ingredients:
    • Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing just until combined.
  6. Bake:
    • Pour the batter into the prepared baking pan and spread evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool:
    • Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Prepare Frosting:
    • In a medium bowl, beat the softened butter until creamy. Gradually add the powdered sugar, one cup at a time, beating well after each addition. Stir in the vanilla extract and enough milk to achieve a spreadable consistency.
  9. Frost Cake:
    • Once the cake is completely cool, spread the frosting evenly over the top.
  10. Serve:
    • Cut into squares and serve.
