Amazing Forgotten Chicken 🍗🍚

Ingredients (Serves 4)
- 4 boneless, skinless chicken breasts (or thighs)
- 1 can (10.5 oz) cream of chicken soup (or mushroom soup)
- 1 cup long-grain white rice, uncooked
- 1 packet (1 oz) dry onion soup mix (or 2 tbsp homemade mix 🠊 see notes)
- 1½ cups water
- ½ tsp black pepper
- 1 tsp garlic powder (optional)
Optional Upgrades:
- 1 cup frozen peas/carrots (add with rice)
- ½ cup shredded cheddar (sprinkle before baking)
Instructions
1. Prep & Layer:
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Spread uncooked rice evenly in the dish.
- Place chicken breasts on top. Season with pepper and garlic powder.
- In a bowl, mix soup, water, and onion soup mix. Pour over chicken.
2. Bake & Forget:
- Cover tightly with foil. Bake 1 hour.
- Uncover, stir rice (add veggies or cheese if using), and bake 10–15 more minutes until rice is tender.
3. Serve:
- Let rest 5 minutes. Garnish with parsley if desired.
