Bacon Cheeseburger Burrito

Ingredients:

  • 1 lb ground beef
  • 4 slices of bacon, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/4 cup ketchup
  • 2 tbsp mustard
  • Salt and pepper to taste
  • 4 large flour tortillas
  • Optional toppings: shredded lettuce, diced tomatoes, pickles, additional cheese, and ranch or burger sauce

Instructions:

  1. Cook the Bacon:
    • In a large skillet over medium heat, cook the chopped bacon until crispy. Remove and drain on paper towels, leaving the drippings in the skillet.
  2. Brown the Beef:
    • In the same skillet, add the diced onion and garlic. Sauté until the onion is translucent.
    • Add the ground beef and cook until browned. Drain any excess fat.
  3. Mix the Filling:
    • Stir in the cooked bacon, ketchup, mustard, salt, and pepper. Mix well and cook for another minute or two until heated through.
  4. Assemble the Burritos:
    • Lay a tortilla flat and spoon a generous amount of the beef and bacon mixture in the center. Top with shredded cheese and any optional toppings you like.
    • Fold in the sides of the tortilla, then roll it up from the bottom to the top, ensuring the filling is secure.
  5. Heat the Burritos:
    • If desired, you can place the burritos seam-side down in the skillet over medium heat to toast them slightly, about 2-3 minutes on each side.
  6. Serve:
    • Slice in half and serve with additional ketchup, mustard, or your favorite dipping sauce.

Tips:

  • You can customize your burritos with additional toppings like avocado, jalapeños, or different cheeses.
  • For a spicier version, add some hot sauce or diced green chiles to the beef mixture.
