Ingredients

  • 2 cups broccoli florets (finely chopped or processed)
  • 1 cup shredded cheddar cheese (or a mix of your favorite cheeses)
  • 1/4 cup grated Parmesan cheese
  • 3/4 cup breadcrumbs (plain or panko)
  • 2 large eggs
  • 2 cloves garlic (minced)
  • 1/2 tsp onion powder
  • 1/2 tsp paprika (optional)
  • Salt and pepper to taste
  • Cooking spray or olive oil

Instructions

  1. Preheat the oven:
    Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the broccoli:
    Steam or blanch the broccoli florets until tender. Drain well and finely chop or pulse in a food processor.
  3. Mix the ingredients:
    In a large bowl, combine the chopped broccoli, cheddar cheese, Parmesan cheese, breadcrumbs, eggs, garlic, onion powder, paprika, salt, and pepper. Mix until the ingredients are evenly incorporated.
  4. Shape into balls:
    Scoop about 1 to 2 tablespoons of the mixture and roll it into a ball. Place the balls on the prepared baking sheet.
  5. Bake:
    Lightly spray the balls with cooking spray or drizzle a bit of olive oil over them to help with browning. Bake for 20–25 minutes, turning halfway through, until they are golden brown and firm.
  6. Serve:
    Serve warm with your favorite dipping sauce, such as marinara, ranch, or a spicy mayo.

Tips

  • Make it gluten-free: Substitute the breadcrumbs with almond flour or gluten-free breadcrumbs.
  • Add a protein boost: Mix in some cooked and finely shredded chicken.
  • Crispier option: After baking, broil the balls for 1–2 minutes for extra crispiness.
