Ingredients:

  • 6 large eggs
  • 1 cup cottage cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh chives or green onions
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 cup shredded cheddar cheese (optional, for topping)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preparation:
    • Preheat your oven to 375°F (190°C).
    • Lightly grease a baking dish or individual ramekins.
  2. Mixing the Eggs:
    • In a large bowl, whisk the eggs until well beaten.
    • Add the cottage cheese, Parmesan cheese, chives or green onions, salt, black pepper, garlic powder, and onion powder to the eggs. Mix well to combine.
  3. Baking:
    • Pour the egg mixture into the prepared baking dish or divide evenly among the ramekins.
    • If using, sprinkle the shredded cheddar cheese on top.
    • Bake in the preheated oven for 18-20 minutes, or until the eggs are set and the top is golden brown.
  4. Finishing:
    • Remove from the oven and let the baked eggs cool slightly.
    • Garnish with chopped fresh parsley before serving.
