Ingredients:
- 4 large potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup cooked bacon, crumbled
- 2 green onions, finely chopped
- 1/4 cup sour cream
- 1/2 cup breadcrumbs
- 2 eggs, beaten
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Olive oil spray
Instructions:
- Prepare the Potatoes:
- Preheat your oven to 400°F (200°C).
- Peel and cut the potatoes into chunks. Boil them in salted water until tender, about 15 minutes.
- Drain the potatoes and mash them in a large bowl.
- Mix the Ingredients:
- Add the cheddar cheese, Parmesan cheese, crumbled bacon, chopped green onions, and sour cream to the mashed potatoes.
- Season with salt, pepper, garlic powder, and onion powder. Mix well until all ingredients are combined.
- Form the Potato Balls:
- Shape the potato mixture into golf ball-sized balls.
- Dip each ball into the beaten eggs, then roll them in breadcrumbs to coat.
- Bake the Potato Balls:
- Place the coated potato balls on a baking sheet lined with parchment paper.
- Lightly spray the potato balls with olive oil.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
- Serve:
- Remove from the oven and let cool slightly before serving.
- Serve with your favorite dipping sauce.
