Baked Potato Balls

Ingredients:

  • 4 large potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup cooked bacon, crumbled
  • 2 green onions, finely chopped
  • 1/4 cup sour cream
  • 1/2 cup breadcrumbs
  • 2 eggs, beaten
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Olive oil spray

Instructions:

  1. Prepare the Potatoes:
    • Preheat your oven to 400°F (200°C).
    • Peel and cut the potatoes into chunks. Boil them in salted water until tender, about 15 minutes.
    • Drain the potatoes and mash them in a large bowl.
  2. Mix the Ingredients:
    • Add the cheddar cheese, Parmesan cheese, crumbled bacon, chopped green onions, and sour cream to the mashed potatoes.
    • Season with salt, pepper, garlic powder, and onion powder. Mix well until all ingredients are combined.
  3. Form the Potato Balls:
    • Shape the potato mixture into golf ball-sized balls.
    • Dip each ball into the beaten eggs, then roll them in breadcrumbs to coat.
  4. Bake the Potato Balls:
    • Place the coated potato balls on a baking sheet lined with parchment paper.
    • Lightly spray the potato balls with olive oil.
    • Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
  5. Serve:
    • Remove from the oven and let cool slightly before serving.
    • Serve with your favorite dipping sauce.
