Banoffee Pie 🍌🍯🥧

A British classic with layers of buttery biscuit crust, gooey caramel, fresh bananas, and whipped cream—decadent, no-bake, and irresistible!


Ingredients

For the Crust:

  • 1½ cups (150g) digestive biscuits (or graham crackers)

  • ½ cup (115g) unsalted butter, melted

  • 1 tbsp brown sugar (optional, for extra caramel flavor)

For the Caramel Layer:

  • 1 (14 oz/400g) can sweetened condensed milk (or homemade dulce de leche*)

  • 2 tbsp butter

  • 1 tsp vanilla extract

  • Pinch of salt

For the Topping:

  • 2–3 ripe bananas, sliced

  • 1½ cups (360ml) heavy cream, chilled

  • 2 tbsp powdered sugar

  • 1 tsp vanilla extract

  • Chocolate shavings or cocoa powder (for garnish)


Instructions

1. Make the Crust:

  • Crush biscuits into fine crumbs. Mix with melted butter and sugar (if using).

  • Press firmly into a 9-inch pie dish. Chill 15 mins to set.

2. Prepare the Caramel:

  • Quick method: Pour condensed milk into a saucepan with butter, vanilla, and salt. Cook on low heat, stirring constantly, until thickened (~10 mins).

  • No-cook hack: Use store-bought dulce de leche (or simmer an unopened can of condensed milk in water for 2 hours to make your own**).

  • Spread caramel over the crust. Chill 30 mins.

3. Layer Bananas & Cream:

  • Arrange banana slices over the caramel.

  • Whip cream + powdered sugar + vanilla to stiff peaks. Spread over bananas.

4. Garnish & Serve:

  • Top with chocolate shavings or a dusting of cocoa.

  • Chill 2+ hours (or overnight) before slicing.


Tips for Perfection

🍌 Prevent browning: Toss banana slices in lemon juice before layering.
🔥 Extra depth: Add 1 tsp espresso powder to the caramel.
🥛 Dairy-free? Use coconut cream and vegan butter.
⏳ Storage: Keeps in the fridge for 2 days (best fresh!).
