Buffalo Chicken Pasta

Ingredients:

  • 1 lb (450 g) boneless skinless chicken breast or thighs, diced
  • 12 oz (340 g) pasta (e.g., penne, rotini, or fusilli)
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup (240 ml) buffalo sauce (e.g., Frank’s RedHot)
  • 1/2 cup (120 ml) chicken broth
  • 1 cup (240 ml) heavy cream
  • 1 cup (100 g) shredded cheddar cheese
  • 1/2 cup (50 g) grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions:

1. Cook the Chicken:

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Season the chicken with salt and pepper, and cook it in the skillet until browned and cooked through (about 7-8 minutes per side, depending on the thickness).
  • Remove the chicken from the skillet and set it aside.

2. Cook the Pasta:

  • Cook the pasta according to the package directions until al dente. Drain and reserve a little pasta cooking water.

3. Prepare the Sauce:

  • In the same skillet, add the remaining 1 tablespoon of olive oil.
  • Add the diced onion and minced garlic, and sauté until softened and fragrant (about 2-3 minutes).
  • Stir in the buffalo sauce and chicken broth, bringing it to a simmer. Let it cook for 3-4 minutes to reduce slightly.

4. Add Cheese and Cream:

  • Stir in the heavy cream and bring it to a boil.
  • Reduce the heat and add the shredded cheddar and Parmesan cheeses. Stir until the cheese has melted and the sauce is smooth and creamy.
  • Season with salt and pepper to taste.

5. Combine Pasta and Chicken:

  • Add the cooked chicken and pasta to the sauce, tossing everything together to coat the pasta and chicken evenly with the creamy sauce.
  • If the sauce is too thick, add a bit of the reserved pasta cooking water to reach your desired consistency.

6. Serve:

  • Serve the buffalo chicken pasta on plates, garnished with fresh parsley if desired.
  • Optionally, sprinkle extra cheddar cheese or crumbled blue cheese on top for added flavor.
