Butter Chicken Noodle Soup

Ingredients:

  • 2 tbsp unsalted butter
  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 tbsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne pepper (optional, for extra heat)
  • 1 can (14 oz) tomato sauce
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup egg noodles
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Melt Butter and Cook Chicken: In a large pot, melt the butter over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove the chicken and set aside.
  2. Cook Onions and Spices: In the same pot, add the chopped onions and cook until softened, about 5 minutes. Add the minced garlic and ginger, cooking for an additional 1 minute. Stir in the garam masala, ground cumin, ground coriander, turmeric, and cayenne pepper (if using), and cook for another 1-2 minutes until fragrant.
  3. Add Tomato Sauce and Broth: Pour in the tomato sauce and chicken broth. Stir well to combine. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
  4. Blend Soup Base: Using an immersion blender, blend the soup base until smooth. If you don’t have an immersion blender, carefully transfer the mixture to a blender, blend until smooth, and return it to the pot.
  5. Add Chicken and Noodles: Return the browned chicken to the pot. Stir in the heavy cream and egg noodles. Cook for an additional 10-12 minutes, or until the noodles are tender and the chicken is cooked through.
  6. Season and Serve: Season the soup with salt and pepper to taste. Ladle the soup into bowls and garnish with freshly chopped cilantro.
