Buttery Raspberry Crumble Cookies

Ingredients:

  • 1 cup unsalted butter, softened 🧈

Instructions:

1. Prepare the Dough:
  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a large bowl, cream the softened butter, granulated sugar, and powdered sugar together until light and fluffy (about 2-3 minutes).
  • Add the vanilla extract and almond extract to the butter mixture and mix well.
  • Gradually add the flour and kosher salt, mixing until the dough comes together and is smooth.
2. Shape the Cookies:
  • Scoop tablespoon-sized portions of dough and roll them into balls. Place them onto the prepared baking sheets, spacing them about 2 inches apart.
  • Press a small indentation into the center of each dough ball using your thumb or the back of a spoon.
3. Fill with Raspberry Jam:
  • Spoon about 1/2 teaspoon of seedless raspberry jam into the indentation of each cookie. Be careful not to overfill, as the jam may spread too much during baking.
4. Crumble Topping:
  • With the remaining dough, crumble it on top of the jam to create a rough topping. You can either pinch small pieces of dough between your fingers or break the dough into crumbles and sprinkle it over the jam-filled cookies.
5. Bake the Cookies:
