Cajun Chicken Sloppy Joes

Ingredients:

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • ½ onion, finely diced
  • 1 bell pepper (any color), finely diced
  • 2 garlic cloves, minced
  • 1 tbsp Cajun seasoning (adjust to taste)
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ½ cup tomato sauce
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar (or honey)
  • ½ cup chicken broth (or water)
  • Salt & pepper to taste
  • 4 burger buns (toasted)
  • Optional toppings: pickles, jalapeños, cheese, coleslaw

Instructions:

  1. Sauté veggies – Heat oil in a skillet over medium heat. Cook onion and bell pepper until soft (5 mins). Add garlic and cook 30 sec.
  2. Brown chicken – Add ground chicken, breaking it up. Cook until no longer pink.
  3. Season – Stir in Cajun seasoning, smoked paprika, oregano, salt & pepper.
  4. Sauce it up – Add tomato sauce, tomato paste, Worcestershire, brown sugar, and broth. Simmer 5-7 mins until thickened.
  5. Toast buns – Lightly butter and toast buns in a pan or oven.
  6. Serve – Spoon mixture onto buns. Top with pickles, cheese, or coleslaw if desired.

🔥 Spice Tip: Add a dash of hot sauce or cayenne for extra heat!
