Cake Mix Gooey Butter Lemon Cookies 🍋🍪

These ultra-soft, tangy-sweet cookies are made with lemon cake mix for an easy yet irresistible treat! Topped with a zesty lemon glaze, they’re like sunshine in every bite.

Ingredients

For the Cookies:

  • 1 (8 oz) block cream cheese, softened

  • ½ cup unsalted butter, softened

  • 2 tbsp finely grated lemon zest (about 2 lemons)

  • 1 large egg

  • 2 tbsp fresh lemon juice

  • 1 (15.25 oz) box Betty Crocker™ Lemon Cake Mix

For the Glaze:

  • 1¾ cups powdered sugar

  • 3–4 tbsp fresh lemon juice (adjust for thickness)


Instructions

1. Make the Cookie Dough:

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  • In a large bowl, beat cream cheese, butter, and lemon zest until smooth.

  • Mix in egg and lemon juice.

  • Gradually add cake mix, stirring until just combined (dough will be thick and sticky).

2. Bake:

  • Drop dough by 1.5-tbsp scoops onto baking sheets (space 2″ apart).

  • Bake 9–11 mins until edges are set but centers are still soft.

  • Let cool on sheets for 2 mins, then transfer to a wire rack.

3. Glaze:

  • Whisk powdered sugar and lemon juice until smooth. Drizzle over cooled cookies.

  • Let glaze set 15 mins before serving.
