Ingredients:
- 2 cups grated zucchini

Instructions:
- Prepare Vegetables:
- Place the grated zucchini, carrot, and potato in a clean kitchen towel and squeeze out as much moisture as possible.
- Mix Ingredients:

- Cook Fritters:
- Heat a large skillet over medium heat and add enough olive oil to coat the bottom.
