Ingredients:

  • 2 cups grated zucchini
  • 1 cup grated carrot
  • 1/2 cup grated potato
  • 1/2 cup grated cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped green onions
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for frying

Instructions:

  1. Prepare Vegetables:
    • Place the grated zucchini, carrot, and potato in a clean kitchen towel and squeeze out as much moisture as possible.
  2. Mix Ingredients:
    • In a large mixing bowl, combine the squeezed vegetables, grated cheddar cheese, grated Parmesan cheese, chopped green onions, flour, beaten eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Form Fritters:
    • Scoop about 2 tablespoons of the mixture and form it into a patty. Repeat with the remaining mixture.
  4. Cook Fritters:
    • Heat a large skillet over medium heat and add enough olive oil to coat the bottom.
    • Once the oil is hot, add the fritters in batches, cooking for about 3-4 minutes on each side until golden brown and crispy.
    • Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
  5. Serve:
    • Serve the fritters warm with your favorite dipping sauce.
