Cheesy Velveeta Chicken Twisted Pasta with Mozzarella Garlic Sauce 🧀🍗

This ultra-creamy, cheesy pasta dish combines tender chicken, rich Velveeta, and a gooey mozzarella-garlic sauce for the ultimate comfort food experience! Twisted pasta (like fusilli or rotini) holds every drop of cheesy goodness.

Ingredients

For the Pasta & Chicken:

  • 12 oz twisted pasta (rotini, fusilli, or cavatappi)

  • 1 lb boneless chicken breasts, diced

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp paprika

  • Salt & black pepper to taste

For the Cheesy Sauce:

  • ½ lb Velveeta cheese, cubed

  • 1 cup shredded mozzarella

  • ½ cup heavy cream (or whole milk for a lighter option)

  • ¼ cup grated Parmesan

  • 3 cloves garlic, minced

  • 2 tbsp butter

  • ½ tsp onion powder

  • ¼ tsp red pepper flakes (optional, for heat)

For Garnish (Optional):

  • Fresh parsley, chopped

  • Extra shredded mozzarella


Instructions

  1. Cook the pasta: Boil in salted water until al dente. Drain, reserving ½ cup pasta water.

  2. Season & cook chicken:

    • Toss diced chicken with olive oil, garlic powder, paprika, salt, and pepper.

    • Cook in a large skillet over medium-high heat until golden and cooked through (~6-8 mins). Remove and set aside.

  3. Make the cheese sauce:

    • In the same skillet, melt butter over medium heat. Sauté garlic until fragrant (~30 secs).

    • Reduce heat to low, add Velveeta, mozzarella, cream, Parmesan, onion powder, and red pepper flakes. Stir until melted and smooth.

    • If too thick, add reserved pasta water 1 tbsp at a time.

  4. Combine everything:

    • Add cooked pasta and chicken to the sauce. Toss until fully coated.

  5. Broil (optional): Transfer to a baking dish, top with extra mozzarella, and broil 2-3 mins until bubbly and golden.

  6. Garnish & serve: Sprinkle with fresh parsley and extra red pepper flakes if desired.
